As you see from the JCK shop, Master Saji has started
making some traditional kitchen knives. We thought about
combining his traditional Katana handle and Saya with the
kitchen knife blade. Here are the result for Samurai Chef
Knives. Master Saji has made only 1 pc. each to see the actual
demand. This will be a nice demonstration and convesation
piece for Sushi chefs to prepare Sushi in front of the
guests.

Yanagiba 270mm 10-1/2 inches Japanese traditional
Yanagiba blade with single edge (slight concaved flat grind on
back side) made of Hitachi Gingami #3 Stainless steel in 3.8mm
thick, 5-3/4 inches wooden Katana handle wrapped with
shark-skin and black straps. Brass bolster and Butt. 16-1/4"
overall, weight 225g. Comes with Red/Brown Urushi
lacquired wooden Saya with Stag horn pin stopper with red
tassel and bells. Also comes with Nishijin Katana pouch and
black straps with
tassels.
